AUNT VALERIE'S OVEN FRIED CHICKEN
Ingredients:
- Farm reared chicken weighing 2 kg
- Milk
- Wholemeal flour
- Vegetable oil
Place chicken in a bowl, cover with milk & leave for 1 hour.
Drain the chicken & coat with wholemeal flour.
Heat the oven to 190°c & heat baking tray with 2 tbsp of vegetable oil for 15 mins.
Place the chicken skin side down on baking tray & roast for 20 mins.
Turn chicken & roast for a further 25 mins.
Lightly season with salt & pepper.
REAL CHICKEN GRAVY
- 30g butter
- 30g white plain flour
- 400ml chicken stock
- salt & pepper
Heat butter in saucepan. When melted add flour & mix well.
Cook lightly for 5 mins, then add stock slowly & simmer for 5 – 10 mins.
Season.
