Living in Norfolk sometimes it easy to forget that we are surrounded by a lot of superb farmers rearing some amazing animals.
Norfolk is famous for pig breeding and that is why we will not buy anything but local free-range pork produced on large fields.
Our beef is second to none. What could be better than a juicy steak, matured for a minimum of 21 days, full of flavour, sizzling over charcoal. This time allows for the meat to mature, it makes the meat very soft and adds that superb flavour that so much fresh beef seems to have lost these days. It also allows the meat to lose some of its natural water content, minimising shrinkage in the oven.
We like to specialise in Texal lambs. They are a Dutch breed reared by Norfolk farmers. Take a shoulder of texal lamb, slow cooked until tender and full of flavour. Just imagine the smell tingled with fresh mint sauce.
All of our chickens are reared locally on farms and not crammed into sheds. A plump 5 lb chicken, that has had only time and care to provide its mass rather than growth stimulants, tastes superb. A nice layer of fat under the skin makes the breast juicy and succulent.
